Here is a basic recipe for Galbi, a Korean dish made with marinated beef short ribs:
Ingredients:
- 3-4 pounds beef short ribs, cut into thin slices (about 1/4 inch thick)
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup mirin (sweet rice wine)
- 1/4 cup rice vinegar
- 1/4 cup sesame oil
- 1/4 cup chopped scallions
- 1/4 cup minced garlic
- 1 tablespoon black pepper
- 1/2 cup water
Instructions:
- In a large bowl, combine the soy sauce, brown sugar, mirin, rice vinegar, sesame oil, scallions, garlic, black pepper, and water. Mix well to create the marinade.
- Add the beef short ribs to the marinade and toss to coat. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least 2-3 hours, or overnight for best results.
- When ready to cook, remove the short ribs from the marinade and shake off any excess.
- Heat a grill or grill pan over high heat. Grill the short ribs for 2-3 minutes per side, or until cooked to your liking.
- Serve the Galbi hot, garnished with chopped scallions and sesame seeds if desired.
